i Soli Vermentino from Foresti is an aromatic dry white wine, made of 100% Vermentino. The grapes are grown by several winemakers along the stretch from Ventimiglia to Cervo. The grapes are macerated with the skin in room temperature directly after the harvest for 12 hours. They are then fermented at 18 ° C with yeast extracted the winery’s own grapes. This is followed by the malolactic fermentation, the clarification and then the stabilization. The wine is stored for 5 months in steel tanks, of which 3 months on its lees before being bottled.
