Pinot Grigio from Giol is made from hand-picked grapes, pressed using the most modern technologies in order to extract the clearest and purest juice. The pressed grape juice is then left to let the lees fall to the bottom. The pure juice is transferred into a new tank, yeast is added and the cold fermentation process starts at 16 ° temperature. The wine is retransferred to new tanks and will then rest with regular stirring of the lees, so called “batonnage”. The finished wine is preserved in airtight barrels and the wine is bottled several times a year depending on the demand so as to always offer a fresh wine. The wine is stabilized and bottled under sterile conditions by aseptic filtration.
