Grandes serres – Beaumes de Venise – Rocca Luna – Red wine is a red Beaumes-de-Venise produced from Grenache, Syrah and Mourvèdre. The grapes are removed from their bunches after the harvest and are fermented in temperature controlled steel tanks. The wine is drained from the bottom of the tanks and poured on top of the “wine cake” (délestage) 1 to 3 times at the beginning of the fermentation. Long maceration with daily mixing (remontage). The finalized wine is stored for 18 months, of which 30% on oak barrels.
