Brut Souverain from Champagne Henriot is made from equal parts of Pinot Noir cultivated on the Montagne de Reims and Chardonnay grapes from the Côtes des blancs as well as a small percentage of Pinot Meunier for its fruity character. Not less than 25 different “cuvées” have been from Mesnil sur Oger, Oger, Avize, Cramant, Chouilly, Y, Verzy, Verzenay, Beaumont, Sillery and Mailly Champagne. The wine is produced with 20% of “vin de réserve” and the finished wine is stored about 3 years in the wine cellars in Reims before being commercialized.
