Rosso Icario is produced by 70% Sangiovese- , 20% Teroldego- and 10% Merlot grapes. The grapes are picked by hand and placed in custom baskets for easier sorting when the twigs are removed and the grapes are separated from the bunches. The fermentation lasts 15-20 days at 25-27 ° C and is followed by the malolactic fermentation. The wine is aged in oak barrels for 10 months before being bottled. The finished wine may then store another 4 months before it goes on sale.
