Vino Nobile di Montepulciano is produced from 90% of Prugnolo Gentile which is a local clone of the more well known Sangiovese and 10% of Canaiolo, Mammolo and Colorino grapes. The grapes are picked by hand and sorted in custom baskets where leaves and eventual twigs are discarded. The fermentation takes 20-22 days and is carried out under controlled temperature. The malolactic fermentation then follows at 18-20 ° C temperature. after that, the wine is transferred to oak barrels where it is stored for 18 months before being bottled. The bottles are stored another 6 months before they go on sale.
