Jas d’Esclans – Cru Classé – Rosé is produced from Grenache, Cinsault and Syrah. The grapes are harvested and allowed to cold macerate with the skins for a couple of hours. They are then pressed into must that is partially protected from contact with the air via new nitrogen-protecting technology and thus reduces or excludes the need for sulphites. The must is cold macerated at 12° (stabulation). After that, the grape varieties are put together to get a harmonious and balanced mixture before fermentation. The must is then allowed to ferment and then the final wine is put together.
