La Canosa – Nummaria – Red wine is named after the Latin “Theca nummaria” (“treasure chest for important documents”). The wine is made from 70% Montepulciano and 30% Sangiovese grapes from the best vineyards. The grapes are picked from the bunches after harvest and fermented according to the classic method for 10-14 days at a controlled temperature (max 28 °C). The wine is assembled after 12 months of aging of the Sangiovese in large wooden barrels of 65 hl and a 12-month aging of the Montepulciano in small oak barrels of 5 hl. After bottling, the wine is aged for a further 8 months in the wine cellar at a controlled temperature (15 °).
