La Canosa – Signator – Red wine named after the Latin “signator”, who was the one who guaranteed the legality of documents and ensured that things were done right during the transfer of land from father to son. The wine is made from 50% Montepulciano and 50% Sangiovese grapes. The grapes are picked from the bunches after harvest and ferment according to the classic method for 8-10 days at a controlled temperature (max 28 °C). The wine is aged mainly in steel tanks, but also in large barrels (65 hl) for 8-12 months. After bottling, the wine is aged for a further 6-8 months in the wine cellar at a controlled temperature (15 °).
