Tradition from La Célestière is a red Châtaeuneuf-du-Pape made of 55% Grenache, 15% Cinsault, 15% Syrah and 15% Mourvèdre. The winery is run organically without chemical fertilizer or weed control. The vines are cut in “Gobelet” shape. The harvest is done by hand and the grapes are then transported into small baskets and then sorted on a sorting table. The selected grapes are picked from their clusters (égrappage) and are then easily squeezed (foulage). The vinification is done according to classical method in temperature controlled steel tanks.
