IGP Vaucluse from La Célestière is made from 42% Grenache, 35% Syrah as well as from Alicante and Cinsault from old vines "Vieilles vignes". The agriculture is organic without either chemical fertilizer or weed reclamation. The vines are cut in "Gobelet" form. The harvest is done by hand and the grapes are then transported in small baskets and are then sorted on a sorting table. The grapes are picked from the clusters (égrappage) and easily squeezed (foulage). The vinification is done according to classical method in temperature controlled steel tanks.
