Grapes are pressed in December and then cold macerated before fermentation begins. Fermentation lasts for 12-15 days with frequent pumping over in new vats. Aging is done in 225 to 500 liter French oak barrels, as well as in 50 Hl barrels for about 30 months’ time and then a further 8 – 10 months in bottle.
