Latium Morinis Amarone “Campo Leon is made from 70% Corvina and Corvinone grapes, 20% Rondinella grapes and 10% Oseleta and Croatina. The harvest is done manually at the beginning of October, with careful selection of the grapes based on the ripening process. This is followed by drying the grapes for 100-120 days. Grapes are pressed in December and then cold macerated before fermentation begins. Fermentation lasts for 12-15 days with frequent pumping over in new vats. Aging is done in 225 to 500 liter French oak barrels, as well as in 50 Hl barrels for about 30 months’ time and then a further 8 – 10 months in bottle.
