“Ariddu” is the name for the Grillo grape variety in local Sicilian dialect. A typical Sicilian grape variety with thick transparent skin, golden color with rust-colored spots. After the harvest, the grapes are cool macerated with the skins for 12 H to extract as much aromas as possible. The grapes are pressed and then let to ferment. The storage takes place in steel tanks for 3 months before bottling and the wine is then stored for another 1 month in the bottle.
