Cerasuolo comes from the word “Cerasa” which literally means “cherry” in local Sicilian dialect and which is also the organoleptic description of this DOCG wine (DOCG Cerasuolo di Vittoria). On top of this, Cerasa is a real “Classico” since the wine is produced in the municipality of Vittoria itself. The wine is made from 50% Nero d’avola and 50% Frappato and undergoes a long maceration (7-10 days) with the skins. The fermentation takes place at controlled temperature. The wine is stored on steel tanks for one year before being bottled and is then stored another 6 months.
