Faune from Moulin de Gassac is made from 50% Chardonnay and 50% Viognier which grow not far from the l’Etang de Thau in the Langedoc region. After the harvest, the grapes are removed from their bunches and are cool macerated for 10-12 hours. The grapes are then pressed and the must is fermented in steel tanks at controlled temperature. The wine is stored for 4-5 months in steeltanks before being bottled.
