Sauvignon from Moulin de Gassac is produced from Sauvignon grapes grown in the surroundings of the Etang de Thau in the Langedoc region. After harvesting, the grapes are removed from their bunches and the fermentation takes place in steel tanks at controlled temperature. The wine is then stored for 5-6 months before being bottled.
