Viognier from Moulin de Gassac is produced from Viognier grapes grown in the surroundings of l’Etang de Thau in the Languedoc region. After harvest, the grapes are separated from their clusters (éraflage) and macerates for 3 hours with their skins. The grapes are then pressed and the must is fermented in steel tank at controlled temperature. The wine is stored for 5 months before bottling.
