Cuvée Prestige from Ollieux Romanis is produced by 45% Carignan, 25% Grenache, 25% Mourvèdre and 5% Syrah. The vines grow in a typically Mediterranean red, rocky soil on sandstone. The harvest is done by hand. A certain carbonic maceration for the Carignan, destemming of the other. The fermentation takes place on steel tank at controlled temperature.
