Oratoire de Chasse-Spleen is made from Cabernet Sauvignon, Merlot and Petit Verdot. The grapes are fermented in temperature-controlled steel tanks, followed by the malolactic fermentation. The wine is then stored in oak barrels for up to 18 months. Each grape variety is stored separately and changes barrels 4 times during storage to remove the lees on the bottom (soutirage) each time. The final wine is combined between the different cuvées, clarified and then bottled.
