Merlot Sito dell’Ulmo from the Planeta winery is a red wine made from 100% Merlot grapes grown in Sambuca on the southwest part of Sicily. The grapes are harvested around the 10th of September and the grapes are picked from their bunches. The fermentation takes place during 14-days period at 28 ° C. The wine is then sucked out and separated from the hard lees (svinatura) and transferred into oak barrels from Allier in France. The oak barrel storage lasts for 12 months prior to the bottling.
