Stefano Accordini – Acinatico – Amarone della Valpolicella – Red wine produced from Corvina Veronese, Rondinella and Molinara. After the harvest, the grapes are sorted, selected and placed in 6 kg boxes which are placed in fruit cellars for drying. During drying of the grapes, a series of biochemical processes, including Botrytis Nobile, convert some of the sugar into glycerin. After pressing the dried grapes, the maceration and alcoholic fermentation give life to a highly structured wine that is incredibly rich in aromas. The wine is then stored for 2 years in large oak barrels.
