Stefano Accordini – Acinatico – Valpolicella Ripasso – Red wine made from Corvina Veronese, Corvinone, Rondinella and Molinara. The vintage Valpolicella wine is re-fermented on the marc of the Amarone wine once the alcoholic fermentation is complete. The marc is still rich in aromatic components, colour and sugar. The Valpolicella Ripasso is then aged for 12 months in barrels during which the wine undergoes malolactic fermentation, thus becoming a wine with unique and unmistakable characteristics.
