“Bolgherese” is made of equal parts of Cabernet Sauvignon- and Merlot grapes. The grapes are harvested in custom “baskets” with a capacity of 18 kg of grapes. These baskets facilitate the sorting of the grapes where twigs, leaves and other debris are removed. The grapes are fermented in stainless steel tanks at controlled temperatures. The final wine is then stored in French oak barrels (50% new barrels) for 16 months and then a further 6 months in the bottle.
