“Caccia al Palazzo” (hunting palace) is made of equal parts of the Super tuscan grapes Cabernet Sauvignon and Merlot. The grapes are harvested in adapted “baskets” with a capacity of 18 kg of grapes. These baskets facilitates the sorting of the grapes where twigs, leaves and other debris are removed. The grapes are fermented in stainless steel tanks at controlled temperatures. The wine is aged in French oak barrels for 12 months.
