“Gavi” was probably the first Italian white wine that received international reputation, and today it is widely known. Gavi is made from 100% cortesegrapes grown in the region around at the village of Gavi. Olim Bauda’s Gavi is made from grapes grown at 300 meters above sea level. The vines are in clayey and chalky soil which provides the mineral and fresh character to the wine. The production may not exceed 9.5 tons of grapes or 6.65 hectoliters of wine per hectare. Olim Bauda’s Gavi is raised on steel tank (no oak) which helps to maintain the natural character of the wine.
