Casalj from Tenuta Rapitalà is made from Catarratto grapes, grown in calcareous clay soil at 300-600 meters above sea level. The harvest is done in mid-September with controlled oxygen contact to preserve the aromas of the grapes. The grapes are pressed and fermented at controlled low temperature for more than 2 weeks. The wine is aged for 3 months in French oak barrels and is then stored on its lees until March before being bottled.
