Vietti – Perbacco – Langhe Nebbiolo – Red wine is made from 100% Nebbiolo grapes. The vinification is mainly done from grapes from different vineyards with Nebbiolo da Barolo and Nebbiolo da Barbaresco. The fermentation lasts for about 3-4 weeks at a temperature of 28°-32°C. This is followed by malolactic fermentation in steel tanks and/or in barriques. After the malolactic fermentation, the wine is further stored in wood (barriques and large barrels) for about 18/20 months before being assembled in steel tanks for bottling. The grapes from the different vineyards are vinified and stored separately until the yearly Langhe wine is selected. The other wines are further aged to become Barolo Castiglione.
