Il était une fois … means “Once upon a time …” and is a tribute to Xavier Combe’s grandfather whose vines until today are cultivated like “at that time”. The wine is organic and is produced from 70% Syrah and 30% Grenache exposed in eastern direction. Xavier is interested in biodynamic viticulture and includes the astral criterias in the winegrowing. The wine is cultivated in Visan, a small town between the more famous Vacqueyras and Gigondas.
