Ariella from Vinosia is made from 100% Greco di Tufo grapes grown in a very calcium carbonate-rich soil, created over the millennia's by the dissolution of sandstone, in the municipality of Montefusco. The harvest is done in the second part of October. The grapes are soft-pressed in entire clusters. The juice is cleared through cold static clarification. The fermentation is partly done with natural yeast. The malolactic fermentation isn't performed entirely.
