Ultra. The harvest is made during the first ten days of October. The grapes are soft pressed with whole bunches and the juice undergoes cold static clarification. Spontaneous fermentation, only with added yeast if needed. Malolactic fermentation, though not completely carried out. Storage for 3 months in stainless steel tanks and another 3 months in bottle.
