Azienda agricola Taliano Michele – Ad Altiora – Barbaresco is produced from 100% Nebbiolo grapes grown in the Montersino area (San Rocco d’Elvio). The grapes are harvested in mid-October. The alcoholic fermentation and maceration of the grapes with their skin takes place in stainless steel tanks. The wine is then bottled in oak barrels where it is stored for approximately 24 months. In this refining phase, malolactic fermentation and important condensation reactions between anthocyanins and tannins take place. Barbaresco
