“L’Exception” is made from 59% Cabernet Sauvignon and 41% Merlot. The harvest is done by hand. The grapes macerate for 48H after harvest before the fermentation begins. A long fermentation at 32 ° C for one month’s time follows – 40% steel tanks and 60% oak – with regular pressure on the “grape cake” formed on the top of the tank (pigeage) to extract the most possible flavors. The two grape varieties are vinified separately.
