Domaine Colbois – Chablis : the vinification and storage of the wines is primarily made in termo-controlled stainless steel tanks, bringing modern technology to traditional production methods. The Chablis wine is vinified in stainless steel tanks and is then stored for 12 months on its lees while being regularly stirred (battonage).
