The red “Trassegum” is produced by 50% Syrah, 25% Carignan and 25% Mourvèdre grapes. The two latter varieties come from vines that are over 80 years old. The harvest is done manually and the grapes are separated from the bunches before they are macerated for 24 days before the fermentation process begins. The finished wine is aged one year in French oak barrels and then stored a further 8 months in a concrete tank.
