Collet de Bovis “Cuvée Prestige” is made from 100% Rolle grapes. The grapes are harvested by hand around the 20th of September. The grapes are then lightly pressed and are let to macerate. They are then completely pressed and the peel is separated from the juice. The wine is then fermented directly in oak barrels .
