The grapes are then dried in fruit cellars for around 100 days and undergo a weight reduction of 40%. They are then de-stemmed and lightly pressed. Fermentation takes place in temperature-controlled stainless steel tanks at a temperature of 15°-20°C and lasts for 25 days. The finalized wine is aged for 24 months in French oak barrels and then another 6 months in the bottle.
